As was scarped up at the Natchez Trace 'Ed's Many-Chickens' Cookout/Potluck
Corn Scallop
2 Eggs
1 15 oz. can of whole kernel corn, undrained
1 15 oz can of cream style corn
1 6 oz. can of evaporated milk
4 Tablespoons of butter, cubed
2 Tablespoons of mince onion
1/2 tsp. salt
1/4 tsp. pepper
2 Cups (1 sleeve) saltine crackers, crushed
1 (12 oz) package of diced Pepper Jack cheese or Swiss cheese
Pre heat oven to 325 deg. . Grease a 13 x 9 inch baking dish
Beat eggs slightly in a large bowl. Stir in the corn. Add the evaporated milk, butter, onion, salt and pepper. Fold in cracker crumbs and diced cheese. Pour into baking dish. Bake 1 hr or until set. Let stand 5 minutes.

CRANBERRY SALAD
THE STUFF:
1 lb. of Cranberries (get the red ones .. its Christmas!)
2 Cups of Sugar
1 Large can of Crushed (not smashed) Pineapples
2 Boxes of Cherry Jello (more red)
1 1/2 Cups of boiling water (be careful)
1 1/2 to 2 Cups of Chopped Pecans (depending on how well you like pecans)
WHAT TO DO WITH THE STUFF:
Do NOT drain the pineapple! Chop the cranberries, (she puts her's through a food grinder ... that would be 'grinded' cranberries). Mix all items together and then slam 'em in the 'fridge'.

THE STUFF
1 Box of German ('Ya Ya') Chocolate Cake Mix
2 Eggs
1 Stick of butter ... you must melt it!
1 Cup of Chopped Pecans (exactly 1 cup)
1 Box of Powdered Sugar
8 oz. of Cream Cheese ... you have to soften it .. somehow.
1 Egg (that looks like a total of 3 eggs if my math is working)
1 tsp Vanilla (I think a 'tsp' is like a tea spoon)
ASSEMBLY
Mix together the cake mix, 2 eggs, butter (melted .. you did melt it?) and the nuts. Spread the batter into a greased 13" x 9" cake pan. Now mix together the powdered sugar, cream cheese, 1 egg (the other egg), vanilla and spread on top of the first layer.
Bake for 25 to 30 min at 350 degrees.

ICING STUFF
12 oz. Cool Whip (here comes the calories)
3/4 to 1 Cup of Coconut (or is that Coconuts?)
1/2 Cup of Chopped Nuts (could you use peanuts?)
1 Hershey Candy Bar Grated (I don't think you can buy them grated)
USING THE ICING STUFF:
Spread the Cool Whip on top of the Cake (ah, a traditional icing) Spread the coconut and nuts on top of the Cool Whip (sounds tricky) and then Sprinkle the grated chocolate bar on top of the nuts. (be careful not to get any on the coconut)
THAT THAT THAT'S ALL FOLKS!
Willie Snow's Famous Frozen Coconut Pie
What you'll Need!
2 Pie Crusts
7 oz of coconut
1/2 cup of butter
1 cup of chopped pecans
8 oz of cream cheese
16 oz cool whip
1 can of Eagle Brand milk
Jar of caramel ice cream topping
Cook and cool 2 Pie Crusts
In Iron skillet brown 7 oz of coconut, 1/2 cup of butter and 1 cup of chopped pecans ... being careful not to get it tooooo brown.
Mix 8 oz of cream cheese (room temp), 16 oz cool whip and 1 can of Eagle Brand milk to soft and creamy.
Put 1/4 of the mixture in each pie crust ... then put half of coconut mixture on top.
Take a jar of caramel ice cream topping and put 1/4 on each pie.
Repeat layers.
Freeze
